Italian Gravy Recipe

Ingredients
  • 1 c water .
  • 1 tsp rosemary .
  • 1 (6 oz) can tomato paste .
  • 6 garlic cloves (sliced) .
  • 1/2 c sliced fresh parsley .
  • 1 lb skinless chicken .
  • 1 quart chicken stock (could use beef) .
  • 1 tbsp dry basil .
  • 1 tsp sugar .
  • 1 tbsp oregano .
  • 1/2 tsp red pepper flakes .
  • 1-2 tbsp salt .
  • 1/2 lb sliced mushrooms .
  • 1/2 tsp pepper .
  • 2 (28 oz) cans tomato puree .
  • 2 medium minced onions .
  • 1 large carrot (grated) .
  • 1/4 c olive oil .
  • 2 bay leaves

Directions
  • Step #1 In a large pot mix the tomato puree, stock, paste, & water; set aside.
  • Step #2 In a fry pan saute the oil, onion, garlic, & carrots.
  • Step #3 Add all the rest of the ingredients & put them into the large pot.
  • Step #4 Simmer for 2 hrs partly covered--stirring often.
  • Step #5 Remove chicken being careful to get all the bones out.
  • Step #6 Pick over the chicken meat & put back into the pot.
  • Step #7 Skim the fat.
  • Step #8 Store in refrigerator for various uses during the week.
  • Step #9 Freezes well.
