Coriander Tabbouleh Salad With Shrimp Recipe

Ingredients
  • 2 1/2 c boiling water
  • 1 tbsp minced fresh ginger root
  • 1 cucumber, peeled & sliced
  • 1 c bulgur (cracked wheat), uncooked
  • 1/4 c sliced fresh mint leaves
  • 3 tbsps olive oil
  • salt & pepper to taste
  • 1 c sliced green onions
  • 1 tbsp ground coriander
  • 10 jumbo cooked shrimp - peeled & deveined
  • 1/4 c fresh lemon juice
  • 1 c sliced fresh parsley

Directions
  • Step #1 Place bulgur in a large bowl, & pour the boiling water & olive oil over it.
  • Step #2 Stir, cover, & let this stand for 15 to 20 mins.
  • Step #3 When all of the water has been absorbed & the bulgur is tender, parsley, cucumber, green onions, stir in the the lemon juice, & mint.
  • Step #4 Spice up with coriander, ginger, salt & pepper.
  • Step #5 Garnish with shrimp.
