Mint Chocolate Brownies Recipe

Ingredients
  • 3 large eggs .
  • 25 small peppermint patties .
  • 8 tbsps unsalted butter .
  • 1 c sugar .
  • 8 oz semisweet chocolate, sliced .
  • 3/4 tsp salt .
  • 1/4 c unsweetened cocoa powder .
  • 1/2 c all-purpose flour

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Line an 8-inch square baking pan with aluminum foil wrap, leaving an overhang on all sides; butter foil wrap.
  • Step #3 Set aside.
  • Step #4 Place chocolate & butter in a medium heatproof bowl set over (not in) a saucepan of carefully simmering water.
  • Step #5 Stir every once in awhile just until melted, 4 to 5 mins.
  • Step #6 Remove from heat.
  • Step #7 Whisk in sugar & salt until smooth; whisk in eggs.
  • Step #8 Gently whisk in flour & cocoa powder just until smooth (do not overmix).
  • Step #9 Spread 1/3 of batter in prepared pan.
  • Step #10 Arrange peppermint patties on batter in a single layer, leaving a narrow border on all sides.
  • Step #11 Top with remaining batter, & smooth surface.
  • Step #12 Bake until a toothpick inserted in center comes out with moist crumbs attached, 45 to 55 mins.
  • Step #13 Cool completely in pan.
  • Step #14 Use foil wrap to lift from pan; peel off foil wrap & discard.
  • Step #15 Cut into 16 squares.
