Cranberry Pecan Salad Recipe

Ingredients
  • crumbled feta cheese
  • 1/2 medium red onion, thinly sliced
  • freshly ground black pepper to taste (optional)
  • 1/2 tsp sugar
  • 1 c pecan halves
  • 6 c mixed salad greens, rinsed & dried
  • 1/2 tsp salt
  • 2 tbsps raspberry vinegar
  • 3/4 c dried cranberries
  • 6 tbsps olive oil
  • 1/2 tsp Dijon mustard

Directions
  • Step #1 Preheat oven to 400F degrees F (200 degrees C).
  • Step #2 Spread pecans evenly on a baking sheet.
  • Step #3 Toast for 8 to 10 mins, or until lightly browned & fragrant.
  • Step #4 In a small bowl, salt, sugar, stir this together the vinegar, mustard, & pepper; mix until sugar & salt dissolve.
  • Step #5 Whisk in olive oil.
  • Step #6 In a salad bowl, pecans, onions, toss together the greens, cranberries, & cheese.
  • Step #7 Drizzle with vinaigrette, & toss carefully to coat.
