Grown-up "tuna", (now) Crab Casserole Recipe

Ingredients
  • 1 tbsp tomato paste .
  • 3 tbsps butter .
  • 1 c water .
  • 1 shallot, finely sliced .
  • 6 fresh thyme sprigs .
  • 1/8 tsp fresh ground black pepper .
  • 2 (7 oz) packages lump crabmeat, cut bite-size pieces .
  • 1/2 lb medium egg noodles, cooked & drained .
  • 3 garlic cloves, peeled & smashed .
  • 1 tbsp fresh lemon juice .
  • 1/4 c brandy or chicken broth .
  • 1/2 c heavy cream .
  • 1/4 tsp salt

Directions
  • Step #1 Pick the crab meat, removing any shell or cartilage.
  • Step #2 Set aside.
  • Step #3 Cook & drain noodles.
  • Step #4 Set aside.
  • Step #5 Preheat oven to 350°.
  • Step #6 Lightly coat four 1-c-capacity baking dishes or one 9” round baking dish with 1 tbsp butter & set aside.
  • Step #7 Melt remaining butter in a medium skillet over med-heat/flame.
  • Step #8 Add shallots & cook this until soft.
  • Step #9 Add tomato paste & garlic & cook, stirring continuously, for 5 mins.
  • Step #10 Move pan away from the heat & add brandy or chicken broth.
  • Step #11 Return to heat & bring mixture to a boil, whisking continuously.
  • Step #12 Reduce heat to medium low, add 1 c water, & let simmer until thickened slightly — about 10-12 mins.
  • Step #13 Strain mixture & stir in the cream, remaining salt, & pepper.
  • Step #14 Add egg noodles, crab meat, & lemon juice & toss to coat.
  • Step #15 Divide mixture evenly among the prepared baking dishes, cover with foil wrap, & bake this until cooked through & the noodles are hot — about 20 mins.
  • Step #16 Garnish with thyme sprigs & serve as soon as possible.
