Pasta Gratin With Boursin And Mushrooms Recipe

Ingredients
  • 1 1/2 tsps salt .
  • 1/4 c flour .
  • 3 1/2 c milk .
  • 1/2 lb sliced fresh mushrooms (use a variety) .
  • 1 lb penne pasta .
  • 5 oz boursin cheese, divided in half .
  • 3/4 c coarse fresh breadcrumbs (use a rustic-type bread) .
  • 1/4 tsp fresh ground black pepper

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Cook penne pasta according to package instruction to al dente stage.
  • Step #3 Drain & set aside.
  • Step #4 Whisk milk, flour, salt & pepper in a medium saucepan.
  • Step #5 Bring to boil, whisking often.
  • Step #6 Add half of Boursin cheese, & cook, until thickened, whisking constantly, about 2 mins.
  • Step #7 Remove from heat.
  • Step #8 Coat six 10 oz.
  • Step #9 gratin dishes with butter.
  • Step #10 Set on a rimmed baking sheet at least 1" apart.
  • Step #11 Toss mushroom, pasta & cheese sauce mixture In a large-ish bowl.
  • Step #12 Divide among prepared gratin dishes.
  • Step #13 Sprinkle top each with bread crumbs & dot with remaining Boursin cheese.
  • Step #14 Cover up each dish with foil wrap.
  • Step #15 Bake until mushrooms are tender, 25-30 mins.
  • Step #16 Remove foil wrap.
  • Step #17 Bake until breadcrumbs are browned, about 7 mins more.
  • Step #18 Transfer to wire rack.
  • Step #19 Allow to cool for 5 mins.
