Nova Scotia Fish Chowder Recipe

Ingredients
  • 1/8 tsp pepper .
  • 1 c sliced onions .
  • 2 c boiling water (enough to cover potatoes) .
  • 2 c sliced potatoes (or so) .
  • 1 bay leaf .
  • 2 lbs haddock fillets, cut bite size .
  • 1/2 tsp salt .
  • 1/2 c butter or hard margarine .
  • 1 c whipping cream

Directions
  • Step #1 In a large pot, melt butter.
  • Step #2 Add onion & sauté until soft.
  • Step #3 Add next 5 ingredients; cover.
  • Step #4 Cook until potatoes are tender-crisp.
  • Step #5 Do not overcook.
  • Step #6 Remove bay leaf.
  • Step #7 Add fish; cook for about 5 mins until fish flakes when tested with a fork.
  • Step #8 Stir in cream; heat slowly, stirring often, until steaming hot.
