Creamy Roasted Garlic Hummus Recipe

Ingredients
  • 1 lemon, juice of .
  • 1/4 c warm water .
  • 2 c canned chick-peas or cooked chickpeas .
  • 1 large head of garlic .
  • 4 tbsps olive oil .
  • 2 tbsps tahini .
  • 1/4 tsp sea salt

Directions
  • Step #1 Preheat oven to 375°F Cut off the very top of the garlic clove (about 1/4") so that the tops of most of the cloves are exposed slightly.
  • Step #2 Coat with a little olive oil & wrap securely in tin foil wrap.
  • Step #3 Roast garlic in oven for 1 hr.
  • Step #4 Remove & allow this to cool.
  • Step #5 Using your fingers, squeeze the soft, roasted garlic out of each clove into food processor/blender.
  • Step #6 Rinse & drain cooked or canned chickpeas.
  • Step #7 Add them, & all other ingredients, to the food processor/blender & mix until completely smooth.
  • Step #8 Scrape ingredients off sides of food processor/blender to make sure it mixs evenly.
  • Step #9 If you find that the hummus is too thick, you can add extra olive oil at this time.
  • Step #10 Add it very slowly, allowing the mixture to mix fully before adding more liquid.
  • Step #11 Serve at about room temp with crudites, warm pita or crackers.
  • Step #12 Optional: Sprinkle top with sliced parsley or paprika before serving.
