Dark And Stormy Sundaes Recipe

Ingredients
  • 3/4 c pineapple tidbits .
  • 3 tbsps brown sugar .
  • 1 tbsp lime juice .
  • 1/2 c coconut, toasted .
  • 2 tbsps butter .
  • 4 tbsps whipped cream .
  • 1 pint vanilla ice cream .
  • 3 bananas, peeled & sliced diagonally 1/2-inch thick .
  • 1/2 c dark rum .
  • 12 gingersnaps, crushed

Directions
  • Step #1 In a large skillet, melt the butter over a medium-high flame.
  • Step #2 Add the bananas & cook, stirring, 3 mins until they begin to soften.
  • Step #3 Sprinkle top the bananas with brown sugar & cook, stirring, 2 mins more.
  • Step #4 Remove the skillet from the heat; add the rum.
  • Step #5 Return the skillet to the heat.
  • Step #6 Standing back, carefully ignite the rum with a long wooden match.
  • Step #7 When the flame burns out, add the lime juice.
  • Step #8 Divide the bananas & sauce between four large martini glasses or dessert bowls.
  • Step #9 Top each serving with the ice cream, crushed cookies, whipped cream, coconut, & pineapple.
