Cabernet Burgers Recipe

Ingredients
  • 1 tomato, sliced thick .
  • 1 1/2 tsps fresh basil, minced .
  • 1 1/2 tsps honey (local, wildflower) .
  • 1/4 c shallots (minced) .
  • 500 ml cabernet sauvignon wine .
  • 1 tsp coarse sea salt .
  • 4 tbsps unsalted butter, room temperature .
  • 1 tbsp fresh rosemary (minced) .
  • 3 c spinach .
  • condiments .
  • 4 focaccia rolls (see Focaccia Buns) or 4 pieces similar bread .
  • 1/2 c sharp cheddar cheese, shredded .
  • 1/2 tsp coarse black pepper .
  • 1 lb ground turkey breast or lean ground beef

Directions
  • Step #1 Boil wine & shallots in saucepan over med-heat/flame 20 mins, until reduced to about 3/4 Celsius Add 1 tbsp & honey.
  • Step #2 Blend well & remove this from heat.
  • Step #3 Mix remaining butter with rosemary & set aside.
  • Step #4 Heat grill.
  • Step #5 Mix meat, salt, pepper, basil & 1/4 c wine mixture in large bowl.
  • Step #6 Shape into 4 patties.
  • Step #7 Grill burgers 3-5 mins, flip, & add wine mixture.
  • Step #8 Grill burgers until cooked through.
  • Step #9 (Flip & brush frequently while grilling).
  • Step #10 Sprinkle top with cheddar after last flip, & leave on grill until cheese melts.
  • Step #11 Spread face buns with butter mixture & grill to toast.
  • Step #12 Place patties on bunds, & top this with tomato slices, spinach, & desired condiments.
