Crawfish Dip Recipe

Ingredients
  • hot pepper sauce to taste
  • 1/4 c sliced fresh parsley
  • 1 (1 lb) loaf processed cheese food, cubed
  • 2 tbsps all-purpose flour
  • 2 lbs peeled crawfish tails
  • salt & black pepper to taste
  • 1 (12 fluid oz) can evaporated milk
  • 2 egg yolks, beaten
  • 1 c butter
  • 2 bunches green onions, sliced

Directions
  • Step #1 Heat butter in a large pot over med-heat/flame.
  • Step #2 Stir in green onions, & cook briefly.
  • Step #3 Add parsley & crawfish, & let simmer about 7 mins, stirring frequently.
  • Step #4 Stir in flour to coat crawfish.
  • Step #5 In a small bowl, mix together egg yolks & evaporated milk.
  • Step #6 Stir into crawfish, & reduce heat to medium-low.
  • Step #7 Gradually add cheese cubes, stirring continuously until the cheese has melted.
  • Step #8 Spice up with salt, pepper, & hot pepper sauce.
  • Step #9 Remove from heat, & bring to about room temp before serving.
