3/4 lb sirloin steaks, trimmed of fat & thinly sliced (you can also substitute chicken. If you prefer, you can chop the meat in the food processor/blender too!) .
3 tbsps fish sauce or reduced sodium soy sauce .
2 tbsps sliced dry roasted peanuts .
1 tbsp canola oil, divided .
3 jalapenos or serrano chili peppers, seeded & minced .
1 orange, peeled & white pith removed, coarsely sliced .
1 onion, finely sliced .
1 head iceberg lettuce, halved, cored & thinly sliced .
1/4 c sliced fresh cilantro
Directions
Step #1 Stir together fish sauce (or soy sauce) & brown sugar in a small bowl.
Step #2 Arrange lettuce on a platter or individual plates.
Step #3 Heat 2 tsps oil In a large-ish nonstick skillet over high heat until hot but not smoking.
Step #4 Stir-fry beef, until browned on the outside & still pink inside, in batches, 30 seconds to 1 min per batch.
Step #5 Spoon over lettuce.
Step #6 Add the remaining 1 tsps oil to the skillet & cook chili peppers, onions & garlic, until softened, stirring occaccsionally, about 1 min.
Step #7 Add the fish-sauce (or soy-sauce) mixture & bring to a boil, stirring.
Step #8 Remove from the heat & stir in the orange & cilantro.
Step #9 Spoon over lettuce & beef, sprinkle peanuts over top & serve warm.
