Sun-dried Tomato And Peas On Endive Spears Recipe

Ingredients
  • 1 lb frozen peas, thawed .
  • 4 heads endive, ends trimmed & leaves separated .
  • 1 tsp kosher salt .
  • 1/4 c extra-virgin olive oil .
  • 8 oz sun-dried tomatoes, drained (about 3/4 c) .
  • 1 tsp fresh ground black pepper .
  • 2 garlic cloves, sliced

Directions
  • Step #1 Combine the peas, sun-dried tomatoes, & garlic in a food processor/blender.
  • Step #2 Pulse the machine until the peas & tomatoes are finely sliced.
  • Step #3 Add the olive oil & pulse until the olive oil is incorporated & the mixture is minced but not yet pureed.
  • Step #4 Transfer to a small bowl & stir in the the salt & pepper.
  • Step #5 Serve as a dip with the endive spears alongside.
