Ingredients
  • 3 tbsps sliced fresh parsley .
  • 1/2 tsp harissa .
  • 1/2 tsp salt .
  • 2 tbsps olive oil .
  • 2 oz mediterranean black olives .
  • black pepper, to taste .
  • 2 tbsps lemon juice .
  • 1 lb carrots, peeled & thinly sliced .
  • 2 garlic cloves, finely sliced .
  • 1 tsp ground caraway .
  • 4 oz tuna in vegetable oil, drained (optional) .
  • 2 hard-boiled eggs, cut in wedges

Directions
  • Step #1 Simmer the carrots 5-10 mins in lightly salted water; drain & set aside.
  • Step #2 Heat the olive oil in a frying pan on medium heat.
  • Step #3 Add the carrots, salt, harrisa, garlic, & caraway; cook about 3 mins.
  • Step #4 Mix in parsley & remove this from heat.
  • Step #5 Transfer to serving bowl & toss with lemon juice & pepper.
  • Step #6 Top with olives, sliced eggs, & tuna if using.
