Ingredients
3 tbsps sliced fresh parsley .
1/2 tsp harissa .
1/2 tsp salt .
2 tbsps olive oil .
2 oz mediterranean black olives .
black pepper, to taste .
2 tbsps lemon juice .
1 lb carrots, peeled & thinly sliced .
2 garlic cloves, finely sliced .
1 tsp ground caraway .
4 oz tuna in vegetable oil, drained (optional) .
2 hard-boiled eggs, cut in wedges
Directions
Step #1 Simmer the carrots 5-10 mins in lightly salted water; drain & set aside.
Step #2 Heat the olive oil in a frying pan on medium heat.
Step #3 Add the carrots, salt, harrisa, garlic, & caraway; cook about 3 mins.
Step #4 Mix in parsley & remove this from heat.
Step #5 Transfer to serving bowl & toss with lemon juice & pepper.
Step #6 Top with olives, sliced eggs, & tuna if using.
