Marinated Tomato Salad Recipe

Ingredients
  • 2 large yellow tomatoes, sliced hortizonally into 1/2-inch slices .
  • 1/2 tsp salt .
  • Garnish .
  • Marinade .
  • 1/4 tsp white pepper .
  • 2 tbsps finely sliced chives .
  • Salad .
  • 16 small yellow pear tomatoes, halved vertically .
  • 1 1/2 c vinegar (tarragon or white wine) .
  • 2 tbsps fresh lemon juice .
  • sunflower sprouts (optional) .
  • 16 cherry tomatoes, halved vertically .
  • 6 plum tomatoes, quartered vertically .
  • 1/4 c finely sliced shallots .
  • 2 tbsps extra virgin olive oil

Directions
  • Step #1 Marinade:.
  • Step #2 Combine vinegar & salt in large bowl; stir until salt is completely dissolved.
  • Step #3 Add shallots, chives, lemon juice & white pepper; mix well.
  • Step #4 Slowly whisk in oil until well mixed.
  • Step #5 Add tomatoes to marinade; toss well.
  • Step #6 Cover up & let this stand at about room temp 2 to 3 hrs.
  • Step #7 To serve, place 3 plum tomato quarters on each of 8 salad plates.
  • Step #8 Add two slices yellow tomato, 4 cherry tomato halves & 4 pear tomato halves.
  • Step #9 Garmish each plate with sunflower sprouts, if desired.
  • Step #10 (Or place all marinated tomatoes on large serving plate & garnish).
  • Step #11 Passive work time is the marinating time.
