Chipotle Potato Salad Recipe

Ingredients
  • 1/2 c fat-free mayonnaise .
  • 2 slices bacon, cooked very crisp & crumbled reserve 1 tbsp for garnish .
  • 1 (15 oz) can black beans, rinsed & drained (the jalepeno or cumin ones work great!) .
  • salt & pepper .
  • 1 bunch green onions, sliced .
  • 2 tbsps lime juice or lemon juice .
  • 1 tbsp Splenda sugar substitute .
  • 1-2 stalk celery, sliced thin (or sliced) .
  • 4 chipotle chiles in adobo, deseeded & sliced finely (or more, use the seeds if you like the heat) .
  • 2 tbsps fresh cilantro, sliced .
  • 8 medium red potatoes, cooked, cooled & sliced .
  • 2 hard-boiled eggs, sliced .
  • 1 tbsp garlic salt

Directions
  • Step #1 Mix first 6 ingredients together.
  • Step #2 Toss in remaining ingredients except 1 tbsp bacon & salt & pepper.
  • Step #3 Mix well.
  • Step #4 Taste to see if you need to add salt & pepper.
  • Step #5 I myself like lots of pepper.
  • Step #6 Top with bacon bits.
  • Step #7 Chill& Serve.
