Pork Medallions With Sauteed Apples Recipe

Ingredients
  • 3/4 tsp dried thyme .
  • 1 tbsp butter .
  • 2 apples, cut into wedges .
  • 1 lb pork tenderloins, cut into 1 inch slices .
  • 1/4 c green onions, sliced .
  • 1/2 tsp paprika .
  • 1/4 tsp salt .
  • 1/4 c unsweetened apple juice .
  • 2/3 c reduced-sodium chicken broth .
  • 1 garlic clove, minced .
  • 2 tsps cornstarch .
  • 1/4 tsp pepper

Directions
  • Step #1 Flatten pork slices to 1/2 inch thickness.
  • Step #2 Combine the thyme, paprika, salt & pepper; sprinkle it over both sides of pork.
  • Step #3 Broil 3-4 inches from the heat for 3-4 mins on each side or until meat juices run clear; keep warm.
  • Step #4 In a nonstick skillet, saute onions & garlic in butter until tender.
  • Step #5 Add apples; cook & stir for 2 mins or until apples are crisp-tender.
  • Step #6 Combine the cornstarch, broth & apple juice until smooth; stir in theto apple mixture.
  • Step #7 Bring to a boil; cook & stir for 1-2 mins or until thickened.
  • Step #8 Serve with pork.
