Chicken With Balsamic Succotash Recipe

Ingredients
  • 1 c sliced onions, use a sweet variety such as Vidalia .
  • 4 boneless skinless chicken breasts (1 1/2 lbs total) .
  • 2 tbsps olive oil, divided .
  • 1 tsp chili powder .
  • 2 c frozen lima beans, thawed .
  • 1/2 tsp black pepper .
  • 1 sweet red pepper, cut into 1/2 inch pieces .
  • 1 tbsp chili powder .
  • 1/2 tsp salt .
  • 2 garlic cloves, minced .
  • 1 tbsp sliced parsley .
  • 3 tbsps balsamic vinegar (good, as Ina would would say ,-) .
  • 2 c frozen corn, thawed .
  • 1/4 c chicken broth (or water)

Directions
  • Step #1 Mix together 1 tbsp chili powder, salt & pepper.
  • Step #2 Sprinkle top on the chicken pieces.
  • Step #3 Heat 1 tbsp oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #4 Add chicken pieces & cook 7-8 mins per side until browned & juices run clear.
  • Step #5 Remove from skillet & tent loosely with foil wrap.
  • Step #6 In the same skillet, add in the remaining olive oil & onions.
  • Step #7 Saute for 3 mins then add red peppers & garlic.
  • Step #8 Continue cooking until onion is tender; about 5 mins.
  • Step #9 Add corn, lima beans, remaining 1 tsp chili powder & the vinegar.
  • Step #10 Cook for 5 mins.
  • Step #11 Add broth (or water) & parsley.
  • Step #12 Heat through.
  • Step #13 To serve, place a bed of succotash on a plate & top this with whole or sliced chicken breasts.
