New Orleans Skillet Pork Chops And Rice Recipe

Ingredients
  • 1 stalk celery, sliced .
  • 1 medium onion, coarsely sliced .
  • 4 pork chops (1/2-inch thick) .
  • 1 c long grain rice .
  • 1/2 tsp fennel seeds .
  • 1 1/2 c water .
  • 2 tbsps brown sugar .
  • 1 tbsp olive oil .
  • 1/8 tsp pepper .
  • 2 tbsps butter .
  • 2 c tomato sauce

Directions
  • Step #1 Sauté onion & celery in butter & oil in heavy deep skillet for 2 mins, or until slightly softened.
  • Step #2 Spice up pork chops with salt & pepper.
  • Step #3 Brown in skillet on both sides.
  • Step #4 Remove from pan; set aside.
  • Step #5 Add water, brown sugar & 1 1/2 c of the tomato sauce to skillet.
  • Step #6 Bring to boiling, scraping up browned bits from bottom of skillet.
  • Step #7 Stir in rice & fennel seeds.
  • Step #8 Return the chops to skillet; spoon sauce & rice over them.
  • Step #9 Cover up & cook over medium low heat 20 to 30 mins.
  • Step #10 Pour in remaining tomato sauce.
  • Step #11 Cover up & cook 10 mins more or until rice & chops are tender.
