Tropical Silverbeet (chard) Filo Recipe

Ingredients
  • 2 tsps olive oil .
  • 1 slice bacon .
  • 100 g mozzarella cheese, finely sliced .
  • 100 g phyllo pastry .
  • 100 g pineapple chunks .
  • 4 rambutans .
  • 100 g silver beet

Directions
  • Step #1 Cook bacon in pan / BBQ / microwave until reasonably crunchy, the crumble or cut it up.
  • Step #2 Finely chop the silverbeet (using top leafy half only).
  • Step #3 Finely chop the pineapple & rambutans, drain twice on paper towels so the pastry doesn't go soggy.
  • Step #4 Combine silverbeet, pineapple, rambutans & bacon in a bowl & mix well.
  • Step #5 Roll mixture into filo pastry to desired size & lightly brush / spray with olive oil.
  • Step #6 Bake in oven for 30 mins at 190C (375F).
