Ingredients
  • 1 1/2 c green puy French lentils .
  • salt .
  • 1/2 c sliced fresh Italian parsley .
  • fresh ground black pepper .
  • 1 onion, sliced .
  • 3 stalks celery, finely sliced .
  • 1 c dry red wine .
  • 1 carrot, finely sliced .
  • 3/4 c cubed lean ham .
  • 2 tsps dried rosemary, crushed

Directions
  • Step #1 Place the ham in a soup pot or dutch oven.
  • Step #2 Add 10 c water & remaining ingredients.
  • Step #3 Bring to a boil over high heat.
  • Step #4 Reduce heat to & let simmer 1 hr, or until lentils are tender & broth is rich.
