Cashew Nut And Green Pepper Risotto. Recipe

Ingredients
  • 1 tbsp soy sauce .
  • 1 green pepper, deseeded & sliced .
  • 2 tsps vegetable oil .
  • 900 ml hot vegetable stock .
  • 300F g brown rice .
  • 125 g tinned sweetcorn .
  • 125 g cashew nuts .
  • 1 onion, sliced

Directions
  • Step #1 Heat onion & carefully fry the onion & pepper for 5 mins.
  • Step #2 Add the sweetcorn & rice, stir well to mix.
  • Step #3 Add stock & bring to the boil.
  • Step #4 Simmer uncovered for 40 mins until tender.
  • Step #5 Add soy & cashews & cook for another 10 mins until all the stock is absorbed.
