Vidalia Onion & Shallot Double Cheese Muffins Recipe

Ingredients
  • 1/4 tsp salt, coarse .
  • 1/2 c vidalia onions, sliced .
  • 1 large shallot, french, sliced .
  • 1/2 c jarlsberg cheese, grated .
  • 1 c buttermilk .
  • 1/2 c sharp cheddar cheese, sliced .
  • 2 tbsps butter, melted .
  • 1/2 tsp cayenne pepper .
  • 1 1/2 tbsps butter, unsalted .
  • 1 egg, large, beaten .
  • 1 1/2 c biscuit mix (bisquick)

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Grease muffin tin & set aside.
  • Step #3 Saute onions & shallots in butter until clear, then cool until needed.
  • Step #4 Mix cheddar & jarlsberg cheeses together.
  • Step #5 In a large bowl add biscuit mix, 1/2 the cheese mix, & salt.
  • Step #6 Stir to mix.
  • Step #7 Add egg & milk together, stir & slowly add to the biscuit mix.
  • Step #8 Next add the sauted onions & shallots to the biscuit mix.
  • Step #9 Stir carefully just to moisten.
  • Step #10 Fill the greased muffin tins 1/2 to 3/4 full, sprinkle the tops with the remaining cheese mix.
  • Step #11 Drizzle the melted butter overtop & sprinkle with cayenne pepper.
  • Step #12 Bake in a 400F degree oven for 20 mins or until done when tested.
  • Step #13 Makes 10 - 12 muffins depending on size.
