Grilled Ouzo-and-nutmeg Lamb Chops Recipe

Ingredients
  • 1 1/2 c ouzo .
  • 12 lamb loin chops .
  • 2 tsps nutmeg, freshly grated .
  • 1/4 c extra-virgin olive oil .
  • 1 tsp cracked peppercorns .
  • salt

Directions
  • Step #1 Pour ouzo into a shallow dish just large enough to hold the lamb chops in a single layer.
  • Step #2 add the olive oil, nutmeg, peppercorns & a big pinch of salt.
  • Step #3 Turn the chops in the marinade to coat.
  • Step #4 Let stand at cool room temperature for 3 hrs, turning the chops every 30 mins.
  • Step #5 Light a grill.
  • Step #6 Remove the chops from the marinade & season this with salt & pepper; reserve the marinade.
  • Step #7 Grill the chops over a medium-hot fire, basting frequently with the marinade, until lightly charred outside & medium rare within, about 8 mins per side.
