Reduced Sugar Pumpkin Bread Recipe

Ingredients
  • 2 tsps liquid stevia .
  • 1/4 c milk .
  • 1/2 tsp salt .
  • 1 tsp xanthan gum .
  • 1 egg .
  • 1/2 c nuts, sliced .
  • 1 tsp cinnamon .
  • 1/2 c pumpkin .
  • 1/4 tsp nutmeg .
  • 1/8 c olive oil .
  • 1 c gluten-free flour .
  • 1/4 tsp baking soda .
  • 1 tsp baking powder

Directions
  • Step #1 Mix together flour, soda, powder, salt & spices.
  • Step #2 Combine pumpkin, sugar, milk & eggs.
  • Step #3 Add dry ingredients & butter; mix until well mixed.
  • Step #4 Stir in nuts.
  • Step #5 Pour into well greased loaf (9x5x3").
  • Step #6 Bake at 350 degrees for 45-55 min.
