Ingredients
1 (8 oz) can sliced pineapples .
1 c heavy whipping cream .
1 c sugar .
1 (11 oz) can mandarin oranges .
2 tbsps confectioners' sugar .
1 c sour cream .
2 c fresh cranberries or frozen cranberries, coarsely ground .
2 (3 oz) packages unflavored gelatin
Directions
Step #1 In a bowl, mix cranberries & sugar.
Step #2 Let stand for 30 mins or until sugar is dissolved, stirring every once in awhile.
Step #3 Drain juice from oranges & pineapple,reserving 3/4 c juice.
Step #4 Cut pineapple into small pieces.
Step #5 Set fruit aside.
Step #6 In a small saucepan, sprinkle gelatin over reserved juice; let this stand for one min.
Step #7 Cook & stir over low heat/flame until gelatin is dissolved, about 2 mins.
Step #8 Add to cranberry mixture; stir in the oranges & pineapple.
Step #9 Fold in sour cream.
Step #10 In a small mixing bowl, beat cream until it begins to thicken.
Step #11 Add confectioners sugar, beat until soft peaks form.
Step #12 Fold into fruit mixture.
Step #13 Pour into a 6 c ring mold or 12 individual mold lightly coated with nonstick cooking spray.
Step #14 Refrigerate until set.
Step #15 Unmold before serving.
