Cranbrosia Gelatin Mold Recipe

Ingredients
  • 1 (8 oz) can sliced pineapples .
  • 1 c heavy whipping cream .
  • 1 c sugar .
  • 1 (11 oz) can mandarin oranges .
  • 2 tbsps confectioners' sugar .
  • 1 c sour cream .
  • 2 c fresh cranberries or frozen cranberries, coarsely ground .
  • 2 (3 oz) packages unflavored gelatin

Directions
  • Step #1 In a bowl, mix cranberries & sugar.
  • Step #2 Let stand for 30 mins or until sugar is dissolved, stirring every once in awhile.
  • Step #3 Drain juice from oranges & pineapple,reserving 3/4 c juice.
  • Step #4 Cut pineapple into small pieces.
  • Step #5 Set fruit aside.
  • Step #6 In a small saucepan, sprinkle gelatin over reserved juice; let this stand for one min.
  • Step #7 Cook & stir over low heat/flame until gelatin is dissolved, about 2 mins.
  • Step #8 Add to cranberry mixture; stir in the oranges & pineapple.
  • Step #9 Fold in sour cream.
  • Step #10 In a small mixing bowl, beat cream until it begins to thicken.
  • Step #11 Add confectioners sugar, beat until soft peaks form.
  • Step #12 Fold into fruit mixture.
  • Step #13 Pour into a 6 c ring mold or 12 individual mold lightly coated with nonstick cooking spray.
  • Step #14 Refrigerate until set.
  • Step #15 Unmold before serving.
