Ingredients
  • 2 lbs whole roasted cooked chicken, skinned .
  • 1 c red bell peppers, strips .
  • 11 c torn romaine lettuce (about 1 1/4 lbs) .
  • 2 tsps Dijon mustard .
  • 1 1/2 tbsps fresh lemon juice .
  • 1/2 c grated fresh parmesan cheese .
  • 3 tbsps olive oil .
  • 1/4 tsp sugar .
  • Salad .
  • 1/4 tsp black pepper .
  • 1 1/2 c croutons .
  • 1/4 tsp salt .
  • 1 garlic clove, crushed .
  • 2 tsps worcestershire sauce .
  • Dressing

Directions
  • Step #1 SALAD: Remove chicken from bones; shred with 2 forks to measure 3 c meat.
  • Step #2 Combine chicken, lettuce, & bell pepper In a large-ish bowl.
  • Step #3 DRESSING: Combine oil & next 7 ingredients (oil through garlic) in a bowl, stirring well with a whisk.
  • Step #4 Pour over salad; toss well.
  • Step #5 Sprinkle top with croutons & cheese; toss carefully to mix.
