Green Bean Casserole Recipe

Ingredients
  • 2 lbs mixed mushrooms, sliced (such as button, cremini, shiitake) .
  • 3 tbsps unsalted butter .
  • 5 tbsps extra-virgin olive oil .
  • 3 lbs green beans .
  • 4 tbsps freshly grated parmesan cheese .
  • 1 tbsp sliced rosemary .
  • 1/4 tsp black pepper .
  • 2 shallots, sliced .
  • 1 loaf crusty Italian bread .
  • 3 tbsps sliced chives .
  • kosher salt .
  • 1 c heavy cream .
  • 3 tbsps sliced thyme

Directions
  • Step #1 Bring a large pot of water to a boil; add a big pinch of salt & the green beans.
  • Step #2 Cook for about 5 mins, the beans should still be crisp, they will be cooked more in the oven.
  • Step #3 Drain them & set aside.
  • Step #4 Butter a baking dish large enough to hold the green beans with 1 tbsp butter & set aside.
  • Step #5 Heat the oven to 375 degrees F.
  • Step #6 Tear the bread into 2-inch pieces, 1 tbsp thyme, & add 1 tbsp chives, put them into a bowl, 1 tbsp rosemary, 2 tbsps Parmesan, & 3 tbsps olive oil.
  • Step #7 Stir well to coat & spread onto a baking sheet.
  • Step #8 Bake just until the bread just starts to turn golden, about 10 mins.
  • Step #9 Remove from the oven & set aside.
  • Step #10 Meanwhile, melt the remaining butter & olive oil In a large-ish skillet over med-heat/flame.
  • Step #11 Add the mushrooms & shallots, season this with salt & pepper, & cook this until the mushrooms have released their liquid, about 10 mins.
  • Step #12 Pour in the heavy cream, add the remaining thyme & chives, & cook for another 5 mins.
  • Step #13 Add the green beans & stir well.
  • Step #14 Put the green bean mixture into the prepared baking dish, top this with the croutons, & sprinkle on the remaining Parmesan.
  • Step #15 Bake until everything is hot & bubbling, about 20 to 25 mins.
