Blueberry Cheesecake Dessert Recipe

Ingredients
  • For Blueberry Sauce .
  • 1/2 tsp vanilla .
  • 2 1/2-3 c blueberries (either fresh or frozen) .
  • For Cheesecake Filling .
  • 1/2 c melted butter .
  • 1/2 c water .
  • 1/3 c sugar .
  • 22 graham cracker squares, crushed (or 11 rectangles) .
  • 2 well beaten eggs .
  • 2 tbsps lemon juice .
  • 1/2 c sugar .
  • 1 tbsp cornstarch .
  • 1/2 c sugar .
  • For Crust .
  • 16 oz cream cheese (softened)

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Mix graham crackers, 1/2 C sugar & melted butter in a 9x13 pan.
  • Step #3 Beat eggs, vanilla, cream cheese & 1/2 C sugar until creamy.
  • Step #4 Pour onto crust & bake for 15 mins.
  • Step #5 Cool.
  • Step #6 Heat blueberries, water, 1/3 C sugar, cornstarch & lemon juice in a small sauce pan until thick (will coat the back of spoon).
  • Step #7 Pour over cheesecake mixture & chill in the fridge.
