Ingredients
1/4 tsp ground sage .
1/2 lb bulk pork country sausage .
1/4 tsp onion powder .
1 dash hot sauce, to taste .
1 sheet frozen puff pastry, thawed but unfolded .
4 oz cream cheese, at about room temp (1/2 large block) .
1/8 tsp mustard powder .
2-3 eggs .
1/2 tsp salt .
shredded gruyere or swiss cheese .
1/4 tsp ground thyme .
1/4 c finely sliced red sweet bell peppers .
1/4 c finely minced onions .
1 dash worcestershire sauce .
1 finely minced garlic clove
Directions
Step #1 Preheat oven to 400F degrees F.
Step #2 Grease mini-muffin pans.
Step #3 On a lightly floured board, place unfolded thawed pastry sheet & roll out into a rectangle 12 x 14 inches & about 1/8-inch thick.
Step #4 Using a 2-1/2-inch biscuit cutter, cut 24 rounds.
Step #5 Fit rounds into mini-muffin c.
Step #6 Gently saute sausage, & garlic together until meat is no longer pink, onion, red bell pepper, breaking it up as you go.
Step #7 Drain off fat & cool to about room temp.
Step #8 Place 1/2 to 1 tbsp sausage mixture into each pastry c.
Step #9 Blend cream cheese, sage, onion powder, salt, dry mustard, thyme, hot sauce, & Worcestershire sauce until smooth.
Step #10 Beat in eggs, one at a time, just until incorporated.
Step #11 Spoon egg & cheese mixture over sausage in each c.
Step #12 Top with a sprinkling of Gruyere or Swiss cheese.
Step #13 Bake 10-12 mins until puffed & golden.
Step #14 Serve warm.
Step #15 May be baked ahead & frozen.
Step #16 Reheat in a 350-degree F.
Step #17 oven for 15 to 20 mins.
Step #18 The filling is good in a standard 9" pie shell or pre-made puff pastry tart shells.
