Italian Sausage Pot Recipe

Ingredients
  • 2 lbs frozen yellow squash, thawed or fresh yellow squash, sliced .
  • 1 lb bow tie pasta, cooked .
  • 2 quarts spaghetti sauce (I prefer Classico) .
  • 4 lbs mild Italian sausage .
  • 2 lbs frozen sliced spinach, thawed .
  • 2 onions, quartered & thinly sliced

Directions
  • Step #1 Prick sausage all over.
  • Step #2 Put sausage into large pot, cover with cold water, & let simmer for 10 mins to extract excess grease.
  • Step #3 This can be done the night before.
  • Step #4 In 6qt, oval crockpot layer half the sausage & half of each other ingredient.
  • Step #5 Repeat.
  • Step #6 Cook on high for 3 hrs then on low for 3-4 hrs.
  • Step #7 Serve over favorite pasta (I used bowties tonight), topped with parmesan.
  • Step #8 Its low-carb if you control the pasta quantities.
