Baked Chimichangas Recipe

Ingredients
  • 1 yellow tomatoes, seeded & sliced (optional) .
  • 1 c tomato sauce .
  • 1/2 c sour cream (optional) .
  • salt, to taste .
  • pepper, to taste .
  • 1/2 c salsa (optional) .
  • 3 scallions, sliced .
  • 1 tbsp chili powder (I also mix in other spicy spices as the mood strikes me) .
  • 2 tbsps cilantro (optional) or flat leaf parsley, sliced (optional) .
  • 1 tbsp extra-virgin olive oil .
  • 1 lb smoked deli turkey, sliced .
  • 1/2 c monterey jack pepper cheese, shredded .
  • 2 c cabbage, shredded (I used the bagged coleslaw mix) .
  • 4 burrito-size flour tortillas .
  • 1-2 chipotle chile in adobo, depending on desired level of spiciness

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 In a large bowl, mix turkey & chili powder (and other seasonings, if using).
  • Step #3 Add cabbage, chipotles, tomato sauce, & scallions.
  • Step #4 Toss filling to mix well.
  • Step #5 Spice up with salt & pepper to taste.
  • Step #6 Place tortillas in a kitchen towel & place this in microwave.
  • Step #7 Microwave 1 min on high.
  • Step #8 To build the chimichangas, place one of the tortillas on a flat surface.
  • Step #9 Sprinkle top 2 tbsps cheese near one edge of the tortilla.
  • Step #10 Pile 1/4 of the filling on top.
  • Step #11 Tuck sides up & roll tightly.
  • Step #12 Repeat with remaining tortillas, cheese, & filling.
  • Step #13 Line a baking sheet with aluminum foil wrap (DO NOT do this if you are using a toaster oven.
  • Step #14 Apparently foil wrap can wreck the oven).
  • Step #15 Brush a thin layer of oil over the foil wrap (If using a toaster oven, brush the oil directly on the baking tray).
  • Step #16 Place chimichangas on prepared sheet.
  • Step #17 Brush lightly, but completely, with oil.
  • Step #18 Bake until wraps are deeply golden, about 15-17 mins.
  • Step #19 Serve with sour cream, & salsa, cilantro, tomatoes, if desired.
