Thai Coconut Milk And Chicken Soup Recipe

Ingredients
  • 2 inches piece of fresh galanga root or frozen galanga root, thinly sliced .
  • 2 (13 1/2 oz) cans unsweetened coconut milk .
  • 2 c chicken stock .
  • 1 stalk fresh lemongrass, cut in 1-inch pieces & crushed .
  • 1/4 c thinly sliced scallions .
  • 1/4 c sliced fresh cilantro .
  • 1 lb boneless skinless chicken breasts, cut in 1-inch cubes .
  • 1 lime, juice of .
  • 2 tbsps Thai fish sauce

Directions
  • Step #1 Place chicken, galanga, chicken stock, & lemon grass In a large-ish saucepan & bring to a boil.
  • Step #2 Reduce heat to low & let simmer until chicken is cooked through.
  • Step #3 Add coconut milk & continue cooking on low until soup comes back to a simmer.
  • Step #4 Just before serving stir in the fish sauce & lime juice.
  • Step #5 Pour into soup bowls & sprinkle top this with scallions & cilantro.
