1 1/2 c very strong espresso or good quality coffee, cooled .
2 tbsps unsweetened cocoa, for dusting .
1/4 c superfine sugar .
3/4 c light cream cheese .
16 ladyfingers
Directions
Step #1 Beat the cheeses, rum & sugar with electric beaters until light & creamy & set aside.
Step #2 Pour the coffee into a large shallow dish.
Step #3 Quickly dip 1 side of half the ladyfingers into the coffee & lay closely together with the dipped side down over the base of a large flat-based serving dish or large cafe au lait c.
Step #4 Spread half of the cheese mixture evenly over the ladyfingers.
Step #5 Dust with half the cocoa then repeat layers with coffee-dipped biscuits & cheese.
Step #6 Cover up with plastic wrap & put in the fridge for at least 6 hrs or overnight.
Step #7 Dust with remaining cocoa just before serving.
