Spicy Vegetable-ground Beef Soup Recipe

Ingredients
  • 1/2 tsp ground black pepper .
  • 1 tsp salt .
  • 2 c water .
  • 16 oz frozen mixed vegetables .
  • 2 garlic cloves, pressed .
  • 1 lb ground chuck .
  • 26 oz spaghetti sauce (1 jar, any kind) .
  • 1 tsp sugar (optional) .
  • 1 (10 1/2 oz) can condensed beef broth, undiluted .
  • 4 stalks celery, sliced (optional) .
  • 1 (10 1/2 oz) can sliced tomatoes with green chilies (Rotel) .
  • 1 medium onion, sliced

Directions
  • Step #1 Cook first 4 ingredients in a Dutch oven over medium-high heat until meat is browned & vegetables are tender, stirring until meat crumbles; drain.
  • Step #2 Stir spaghetti sauce & next 5 ingredients into beef mixture; bring to a boil.
  • Step #3 Cover up, reduce heat, & let simmer 15 mins, stirring every once in awhile.
  • Step #4 Add mixed vegetables & sliced tomatoes with green chiles to beef mixture; return mixture to a boil.
  • Step #5 Cover up & let simmer 15 mins or until vegetables are tender, stirring every once in awhile.
