Zesty Hummus Recipe

Ingredients
  • 1/2 c warm water .
  • 2 tbsps olive oil (optional) .
  • 1/3 c sun-dried tomatoes .
  • 1/3 c roasted red peppers .
  • 1/2 c lemon juice (approximately 2 lemons, juiced) .
  • 3 (15 oz) cans garbanzo beans, rinsed .
  • 2 large garlic cloves, roasted & crushed .
  • 10 fresh basil leaves .
  • 1/3 c tahini paste (100% ground hulled sesame paste) .
  • pepper

Directions
  • Step #1 Cut off both ends of each clove of garlic & remove outer layer of skin.
  • Step #2 In a toaster oven or conventional oven roast garlic for 10-15 mins at 350 degrees.
  • Step #3 Garlic will be slightly golden & a little soft.
  • Step #4 In food processor/blender, water, garlic, tahini, mix until smooth lemon juice, basil, & pepper (to taste).
  • Step #5 Add garbanzo beans slowly & mix for several mins until mixture is a smooth, thick paste.
  • Step #6 Add roasted red peppers & sun dried tomatoes & process again until well mixd.
  • Step #7 If necessary, stop processor & scrape sides with a spatula.
  • Step #8 (Hummus will thicken if put in the fridged, so add more water--up to an extra 1/2 c—if it seems too thick).
  • Step #9 Ideally, hummus be served at about room temp within an hr or two of making.
  • Step #10 To store, put in the fridge for up to 1 week in a covered container.
  • Step #11 Garnish with drizzled olive oil & slices of roasted red peppers.
  • Step #12 Surround with warm pita wedges or crackers & serve this with fresh vegetables.
