Outrageous Carrot Cake Recipe

Ingredients
  • 1/2 c unsalted butter .
  • 1/2 c buttermilk .
  • 1 tbsp light corn syrup .
  • 3/4 c vegetable oil .
  • 1 c granulated sugar .
  • 3 eggs, room temperature .
  • 2 tsps ground cinnamon .
  • 1 1/2 c coconut, grated .
  • 1 (8 oz) can crushed pineapple, well drained .
  • 2 tsps vanilla extract .
  • 2 1/4 c all-purpose flour .
  • 1 tsp vanilla extract .
  • 2 tsps baking soda .
  • 4 1/2 c carrots, grated .
  • 2 c golden raisins, sliced .
  • 1/2 tsp salt .
  • 3/4 c buttermilk .
  • 1/2 tsp baking soda .
  • 1 1/2 c walnuts, sliced .
  • 2 c granulated sugar

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Grease & flour a 13"x9" baking dish, preferably glass.
  • Step #3 In a large bowl, soda, whisk or sift together flour, cinnamon & salt.
  • Step #4 In a medium bowl, buttermilk, sugar & vanilla, then add oil, beat eggs, & mix well.
  • Step #5 Add this egg mixture to the dry ingredients, carrots, then stir in the the pineapple, mixing thoroughly, valnuts, coconut & raisins, & mix well.
  • Step #6 Pour into prepared baking dish & bake this at least 65-70 mins or until toothpick inserted in the middle comes out clean.
  • Step #7 For the glaze--& 10 MINUTES BEFORE THE CAKE IS DONE--in a saucepan mix the sugar, buttermilk, soda, corn syrup & butter, then bring to a boil & boil 5 mins.
  • Step #8 Remove from heat & add vanilla.
  • Step #9 Remove the cake from the oven & with a skewer or knife poke a number of holes into the hot cake, making sure the holes reach the bottom of the cake.
  • Step #10 Slowly pour the hot glaze over the hot cake, carefully spreading it all over the top of the cake, until it is absorbed.
  • Step #11 Let the cake cool completely, then put in the fridge.
