Chili-barbecued Chicken Recipe

Ingredients
  • 1 tsp salt .
  • 1 tsp paprika .
  • 2 tbsps cider vinegar .
  • 1 tsp dry mustard .
  • 3 tbsps ketchup .
  • 3-4 lbs chicken pieces .
  • 1 tbsp lemon juice .
  • 2 tbsps butter, melted .
  • 1/4 c water .
  • 1/4 tsp dry crushed red pepper .
  • 2 tsps chili powder .
  • 2 c hickory chips or mesquite wood chips .
  • 2 tbsps worcestershire sauce

Directions
  • Step #1 Soak wood chips in water to cover 30 mins.
  • Step #2 Stir together 1/4 c water & next 10 ingredients; set aside.
  • Step #3 Drain wood chips.
  • Step #4 Place in center of a large square of aluminum foil wrap, & fold edges to seal.
  • Step #5 Punch several holes in top of packet.
  • Step #6 Prepare fire by piling charcoal or lava rocks on sides of grill, leaving center empty.
  • Step #7 Place foil wrap packet on 1 side of coals; place drip pan on coals.
  • Step #8 Coat food rack with vegetable cooking spray;place rack on grill.
  • Step #9 Arrange chicken, skin side up, over drip pan; grill, covered with grill lid, over medium high coals 10 mins on each side.
  • Step #10 Brush chicken with sauce; gril 20 to 25 more mins or until done, basting & turning often.
