Cream Of Leek Soup Recipe

Ingredients
  • 4 large potatoes, peeled & sliced
  • 2 c half-and-half cream
  • salt & pepper to taste
  • 3 medium leeks (white portion only), sliced
  • 2 tbsps minced fresh parsley
  • 4 c chicken broth
  • 1 medium onion, sliced
  • 4 bacon strips, sliced

Directions
  • Step #1 In a pressure cooker, cook bacon over med-heat/flame until crisp.
  • Step #2 Remove with a slotted spoon to paper towels.
  • Step #3 In the drippings, saute leeks & onion until tender.
  • Step #4 Add potatoes & broth.
  • Step #5 Close cover securely; place pressure regulator on vent pipe.
  • Step #6 Bring cooker to full pressure over high heat.
  • Step #7 Reduce heat to medium-high & cook for 5 mins.
  • Step #8 (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.
  • Step #9 ) Remove from the heat.
  • Step #10 Immediately cool according to manufacturer's directions until pressure is completely reduced.
  • Step #11 Uncover; cool soup slightly.
  • Step #12 In a mixer, process soup in batches until smooth.
  • Step #13 return all to the pan.
  • Step #14 Add cream & parsley; heat through over medium-low heat (do not boil).
  • Step #15 Spice up with salt & pepper.
  • Step #16 Garnish with bacon.
