Dried Fruit Fruitcake Recipe

Ingredients
  • 2 c dates, pitted & quartered .
  • 2 c dried cherries .
  • 2 large eggs, room temperature, lightly beaten .
  • 2 c golden raisins .
  • 1/2 tsp salt .
  • 1 1/2 c dried apricots, quartered .
  • 1/2 tsp baking soda .
  • 1/2 c unsalted butter .
  • 2 c granulated sugar .
  • 1 c brandy .
  • 1 tbsp almond extract .
  • 2 c slivered almonds .
  • 1/2 tsp ground nutmeg .
  • 2 c all-purpose flour .
  • 1 c dried cranberries .
  • 1 tsp ground cinnamon .
  • 2 c water

Directions
  • Step #1 In a large saucepan, mix first 9 ingredients.
  • Step #2 Bring to a boil over medium high heat, then reduce to low & cook 10 mins, stirring every once in awhile.
  • Step #3 Remove from heat & cool to about room temp.
  • Step #4 Preheat oven to 275 degrees F, then grease & flour a 12-c Bundt pan.
  • Step #5 In a large bowl, & the cooled fruit mixture, then stir in the the lightly beaten eggs, the almond extract, mix the next 6 ingredients which are dry, & mix well.
  • Step #6 Spoon batter into the prepared Bundt pan & bake for at least 2 hrs & 20 mins.
  • Step #7 Toothpick in the center should come out clean.
  • Step #8 Cool in the pan on a wire rack for 20 mins, then unmold onto a serving plate & cool completely.
