Oatmeal Rye Bread Recipe

Ingredients
  • 1 tbsp salt .
  • white flour (as needed) .
  • 3 c warm water .
  • 2 c flour .
  • 2 c dark rye flour .
  • 2 tbsps yeast (2 pkg) .
  • 2 c whole wheat flour .
  • 2 c rolled oats .
  • 1/4 c molasses

Directions
  • Step #1 stir the yeast into warm water In a large-ish bowl, add molasses & stir till dissolved.
  • Step #2 add the white flour & the whole wheat flour, about 1 c at a time, stirring well after each addition.
  • Step #3 when all four c of flour are stirred in, beat the mixture with a wooden spoon for about 10 mins.
  • Step #4 it should be smooth & very soft.
  • Step #5 cover bowl with a towel & put in a warm place for 45 mins.
  • Step #6 the yeast sponge should rise considerably & be rather bubbly at the end of this time.
  • Step #7 now sprinkle salt over the sponge & fold inches.
  • Step #8 add the rye flour & the oats, a littel at a time & fold them inches.
  • Step #9 the dough should be quite thick.
  • Step #10 add enough white flour to make the dough manageable & turn onto a floured board, & knead for about 20 mins till smooth & elastic.
  • Step #11 cover & let rise till doubled.
  • Step #12 punch down & divide into two parts, forming each into a loaf.
  • Step #13 put into buttered medium loaf pans & let rise till doubled.
  • Step #14 bake this at 350 for 40-60 mins (depends on your oven & how crusty you like your bread - my loaves were just right at about 40-45 mins.
  • Step #15 I brushed the loaves with butter after baking to soften the crust).
