Cajun Fried Catfish Recipe

Ingredients
  • 1/4 c Tabasco sauce .
  • 1/4 c half-and-half cream .
  • 3 tbsps dry white wine .
  • 2 tsps black pepper .
  • 3 tsps salt .
  • 1 tsp cayenne pepper .
  • 1/2 c water .
  • 1/2 c prepared yellow mustard .
  • 1 quart cooking oil (enough to deep fry the fish) .
  • 1 tsp onion powder .
  • 2 c all-purpose flour .
  • 2 c white cornmeal .
  • 5 lbs catfish fillets .
  • 2 tbsps worcestershire sauce

Directions
  • Step #1 Preheat the oil in a deep fat fryer to 375°F.
  • Step #2 Cut the fish into 2 to 3 oz pieces.
  • Step #3 Combine mustard, cream, water, Worcestershire sauce, Tabasco sauce, & wine In a large-ish mixing bowl until well mixed.
  • Step #4 Put the white cornmeal in a food processor/blender & mix at high speed for about 2 mins; It will make the mixture much finer.
  • Step #5 Pour the mixture into another large, dry mixing bowl & add the flour & remaining ingredients, except for the cooking oil.
  • Step #6 Mix well together until well mixed; coat the fish pieces in the mustard mixture, then roll the fish in the dry cornmeal/flour mixture.
  • Step #7 Fry the fish in a deep fat fryer at 375°F; the fish should float to the top of the grease & turn a golden brown.
  • Step #8 Remove from the fryer & drain on a stack of dry paper towels.
  • Step #9 This makes awesome Po' Boy's or just plain old fish sandwiches.
