Chicken Peanut Soup Recipe

Ingredients
  • 1/2 green bell pepper, seeded & finely sliced .
  • 1/2 c chunky peanut butter .
  • 1/2 red bell pepper, seeded & finely sliced .
  • 1 red chili pepper or green chili pepper, with seeds, finely sliced .
  • 1 lime, juice of .
  • 3-5 baby red potatoes, with skin cut into pieces (small enough for the mixer to handle easily) .
  • 4 c chicken broth .
  • salt & pepper .
  • 1 onion, finely sliced .
  • 2 tbsps extra virgin olive oil .
  • 1 lb boneless skinless chicken breasts (about two halves)

Directions
  • Step #1 Bring the chicken broth to boil in a medium pot.
  • Step #2 Add chicken & potatoes.
  • Step #3 Cover up & let simmer over medium-low heat till potatoes are tender & chicken is cooked through (~25 mins).
  • Step #4 While that cooks, heat olive oil in a medium skillet over med-heat/flame & add onion, chile & bell pepper, & cook till softened (~10 mins).
  • Step #5 Remove chicken breasts from the broth & shred the meat.
  • Step #6 Set aside.
  • Step #7 In a mixer, puree half the broth & all the potatoes.
  • Step #8 Pour mixture into remaining broth & stir in the the peanut butter until mixd.
  • Step #9 Add chicken & vegetables.
  • Step #10 Spice up with salt, pepper, & lime juice (to taste).
