Herbed New Potatoes (adapted From The Barefoot Contessa) Recipe

Ingredients
  • 3 tbsps fresh herbs (your preference, parsley, chives, dill) .
  • 4 tbsps unsalted butter .
  • 2 1/2 lbs small potatoes (white, Yukon or red) .
  • 1/2 tsp fresh ground pepper .
  • 1 1/2-2 tsps kosher salt (we find 2 a bit too salty)

Directions
  • Step #1 Melt the butter In a large-ish heavy bottomed pot.
  • Step #2 Add the whole potatoes, salt & pepper & toss well.
  • Step #3 Cook tightly covered 20 to 30 mins over low-heat until fork tender.
  • Step #4 Don't overcook! (check at 20 mins).
  • Step #5 Shake the pot several times to prevent the potatoes from sticking to the bottom or burning.
  • Step #6 *Don't remove the lid.
  • Step #7 Turn the heat off & keep the lid on for another 5 mins.
  • Step #8 Toss carefully with herbs & serve hot.
