Mad Dog’s Southwestern Shrimp Bisque Recipe

Ingredients
  • 1/3 c flour .
  • 1 medium onion (sliced) .
  • 1/4 c sliced fresh cilantro .
  • 1 lb shrimp (peeled, deveined, & cut into bite sized pieces) .
  • 2 serrano chilies (sliced) .
  • salt .
  • 1 tbsp chili powder (preferably New Mexican) .
  • 2 garlic cloves (minced) .
  • 1/2 c celery (sliced) .
  • 2 c half-and-half cream .
  • 4 oz butter .
  • 1/2 tbsp cumin (ground) .
  • 3 c chicken broth

Directions
  • Step #1 1.
  • Step #2 In a large pot melt butter over med-heat/flame & add onion, celery, chilies & garlic, cooking until onions are translucent.
  • Step #3 2.
  • Step #4 Sprinkle top flour over vegetables & mix.
  • Step #5 3.
  • Step #6 Add chicken broth, cumin & chili powder.
  • Step #7 Bring to a simmer.
  • Step #8 4.
  • Step #9 Add half & half while continuously stirring bringing soup back to a simmer.
  • Step #10 5.
  • Step #11 Add shrimp & continue to cook this until shrimp is cooked through (about four mins).
  • Step #12 Serve as soon as possible, garnishing each bowl with sliced cilantro.
