Nuoc Dung Ga Vietnamese Chicken Broth Recipe

Ingredients
  • 5 lbs roasting chickens, cut up .
  • 2 tsps salt .
  • 4 quarts cold water .
  • 1 oz fresh gingerroot, crushed .
  • 2 lbs chicken bones

Directions
  • Step #1 Discard the fat from the chicken.
  • Step #2 Rinse chicken & bones with cold water & place this in stockpot.
  • Step #3 Add the water & ginger; bring to boil.
  • Step #4 (If needed skim foam from surface until it stops forming.
  • Step #5 ).
  • Step #6 Reduce heat to low & let simmer for 2 hrs.
  • Step #7 (Make sure it does NOT boil again just simmers.
  • Step #8 ).
  • Step #9 Remove Chicken & bones; then add the salt & set aside to cool; strain broth.
  • Step #10 Refrigerate up to 1 week or freeze if desired.
  • Step #11 Skim fat from top if it congeals.
