Ingredients
5 lbs roasting chickens, cut up .
2 tsps salt .
4 quarts cold water .
1 oz fresh gingerroot, crushed .
2 lbs chicken bones
Directions
Step #1 Discard the fat from the chicken.
Step #2 Rinse chicken & bones with cold water & place this in stockpot.
Step #3 Add the water & ginger; bring to boil.
Step #4 (If needed skim foam from surface until it stops forming.
Step #5 ).
Step #6 Reduce heat to low & let simmer for 2 hrs.
Step #7 (Make sure it does NOT boil again just simmers.
Step #8 ).
Step #9 Remove Chicken & bones; then add the salt & set aside to cool; strain broth.
Step #10 Refrigerate up to 1 week or freeze if desired.
Step #11 Skim fat from top if it congeals.
