Apple-butter Banana Bread Recipe

Ingredients
  • 1/4 c canola oil .
  • 1/4 tsp baking soda .
  • 1/4 c brown sugar, packed .
  • 1 1/2 c all-purpose flour .
  • 1/8 tsp ground nutmeg .
  • 2 tbsps butter, cold .
  • Optional Streusel-Nut topping .
  • 1/2 c sugar (or use less if you prefer) .
  • 3 tbsps all-purpose flour .
  • 1/2 c mashed ripe bananas (about 2 small) .
  • 1/3 c sliced walnuts or pecans .
  • 1/2 c apple butter .
  • 1/4 tsp salt .
  • 1 1/2 tsps baking powder .
  • 1/2 tsp ground cinnamon .
  • 2 eggs, lightly beaten

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Grease & flour bottom & sides of a 9x5 pan only about 1/2 inch up sides of pan & set aside.
  • Step #3 In a large bowl mix flour, baking powder, baking soda, cinnamon, salt & nutmeg until mixed & set aside.
  • Step #4 In a medium bowl mix eggs, banana, apple butter, sugar & oil & mix.
  • Step #5 Combine egg mixture to flour mixture, stir just until moistened & pour this into prepared pan.
  • Step #6 Bake at 350° about 45 mins or until bread tests done with a toothpick.
  • Step #7 Cool bread in pan for about 5-10 mins & then remove this from pan & cool completely on a wire rack.
  • Step #8 It's best to put in the fridge before serving.
  • Step #9 *** NOTE: For nut topping, mix sugar & flour together & cut in cold butter with a pastry mixer until mixture resembles course crumbs.
  • Step #10 Stir in nuts & top bread before baking.
