Rolled Meatloaf Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 6 slices provolone cheese .
  • 1/2 c Italian seasoned breadcrumbs .
  • 1 lb ground beef .
  • 2 tbsps sliced flat leaf parsley .
  • 1 egg .
  • 1/2 lb ground pork .
  • 1/4 small white onion, finely sliced .
  • 1 c spinach .
  • 3 tbsps pine nuts, sliced .
  • 6 slices prosciutto .
  • 2 tbsps raisins, sliced .
  • salt & pepper .
  • 3 tbsps grated parmigiano or romano cheese

Directions
  • Step #1 Mix meat & next 10 ingredients as if you were making meatloaf.
  • Step #2 Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide.
  • Step #3 Cover up meat with spinach, using the waxed paper to help roll up into a large log, working across the 6 to 8-inch side, prosciutto & cheese then roll the meat, resulting in a 12-inch long log.
  • Step #4 Drizzle the log with extra-virgin olive oil to coat lightly.
  • Step #5 Freeze & thaw, then roast meatroll 20 mins at 450°.
  • Step #6 Cut into 1-inch slices, 3 pieces per portion, & serve.
  • Step #7 Make pasta while meat is in the oven.
