Cornmeal Breakfast Combo Recipe

Ingredients
  • 1/3 c polenta or coarse yellow cornmeal .
  • maple syrup (optional) .
  • 1/2-3/4 tsp cinnamon .
  • molasses (optional) .
  • cream (optional) .
  • 1/4 c raisins or dried cranberries .
  • 2 c water .
  • 1/3 c oat bran

Directions
  • Step #1 Add the water to a medium size saucepan & bring to a boil over med-heat/flame.
  • Step #2 While the water is coming to a boil, polenta, mix the oat bran, & cinnamon.
  • Step #3 When water boils, whisk in the oat bran mixture using a wire whisk to prevent lumps.
  • Step #4 Reduce the heat to low & let simmer, uncovered for 3 to 5 mins or until mixture is thick & creamy, stirring frequently.
  • Step #5 Stir in the dried fruit, divide the cereal between 2 bowls & drizzle with warmed maple syrup or molasses.
  • Step #6 May add a touch of cream if desired.
