Step #1 For the marinade- In a large bowl mix together the honey, ginger, cinnamon, pepper & wine, & stir.
Step #2 Rub all over the chicken pieces, cover & leave in fridge overnight.
Step #3 Drain, reserving the liquid.
Step #4 Heat the oil In a large-ish skillet (one with a lid) & saute onion until golden.
Step #5 Add the chicken & brown all the pieces evenly.
Step #6 Add the chicken marinade & the cinnamon stick & let simmer 40 mins, reducing the liquid by half.
Step #7 Add the grapes & apricots, simmer with the lid on for a further 5-8 mins, until chicken is cooked through.
Step #8 Remove cinnamon stick & serve hot.
